Pumpkin Black Bean Chili (vegan)

A warming, fast and easy crockpot meal! The crockpot is my best friend. As a busy mother, nothing feels better than letting the crockpot cook all day long, filling the house with wonderful smells, and being able to get work done, homeschool the littles, and still lay down a hearty healthy meal at the end of the day, and this one vanishes quickly around here!! Enough talk, lets get to it.....

Ingredients:

1 large yellow or white onion

3 minced garlic cloves

3 cups vegetable broth

2, 15 ounce cans black beans (or fresh made beans)

1, 15 ounce can solid pack pumpkin (I prefer 2, we really like the strong flavor) or fresh mashed pumpkin

1, 15 ounce can diced tomatoes with juice (or fresh tomatoes!)

2 tsp Parsley

2 tsp Chile powder

1 1/2 tsp Oregano

1 1/2 tsp ground Cumin

1/2 tsp Salt

(all herbs can be to taste of course!, you'll notice I have turmeric in mine, and a lot of it, we put it in everything..I think it tastes great in this)

HERE COMES THE HARD PART.....dice onion, throw all ingredients in crockpot, cook on low 4-5 hours.... THATS IT!!!

We enjoy serving ours with corn bread or soul cakes! Also fabulous over brown rice! Of course fresh organic ingredients are always best, but canned is great in a pinch for time! Easy, and so filling and healthy!
